Tonight we didn’t want to make something too elaborate or complicated. Luckily we had some pork chops from Alpine Butcher and some new seasonings that we wanted try! This meal brought together some things we already had in the house: spice rubs, green beans, naan bread and the pork chops. Of course if you wanted to use another vegetable as a side, definitely do that.

INGREDIENTS

  • 2 pork chops, about 1 inch thick (ours were 12 oz each)
  • BBQ Spot “Pigs Ass Rub” (substitute your favorite rub, or just S&P)
  • 2 cups Green Beans, washed and cut
  • 2 TBS Wegmans basting oil, plus more if needed
  • Salt
  • Ground pepper
  • 2 pieces of naan

INSTRUCTIONS

Step 1: Set Traeger to 500 degrees F or to high heat on a conventional grill. Once the grill hits 500 degrees F, wait 20 minutes before cooking (this allows the grill grates to get hot). Scrape and oil the grates.

Step 2: Pat the pork chops dry and season generously with BBQ rub. Set aside.

Step 3: Set toaster oven to 450 degrees F. Then take a medium bowl and combine the green beans and Wegmans basting oil until coated. Put them onto a small pan (make sure it can fit into toaster oven) and salt and pepper generously. Put into toaster oven for 20 minutes.

Step 4: Put the pork chops onto the hottest part of the grill. On a Traeger, I put arrange the chops so that the fat cap lies along the very back edge of the grill. This is the hottest spot, and flames coming up the side will crisp and render the fat cap nicely. After 2 minutes, flip the pork chops. Flip again after two minutes, rotating the chops 45-90 degrees so that the hot grates form a diamond pattern. After two more minutes, rotate and flip again.

Step 5: By now, the chops should have cooked for about four minutes on each side. Remove from grill when instant-read thermometer in the thickest part of the chop reads 135 degrees. Let rest for 5-10 minutes.

Step 6: Toast naan bread in toaster for 2-4 minutes. Evenly divide green beans onto two plates. Put pork chops and naan bread onto both plates and enjoy.
